Sliced Oyster Mushroom

1) Roasted Oyster Mushroom Sandwich recipe

 Ingredients:

  • Oyster Mushroom
  • Salt
  • Pepper
  • Olive oil
  • Onion
  • Garlic
  • Fennel
  • Bread
  • Spinach

How to prepare this recipe?

  • Preheat oven to 350°F (176°C).
  • Slice the bell pepper on all four sides to make four relatively large, flat pieces. Slice the onion into thin strips. Dice the garlic into small pieces and combine it with the mushrooms in a large bowl.
  • Drizzle in the olive oil, sesame oil, then add all the spices, including the onion powder, garlic powder, soy sauce,salt, fennel seeds (crush with your hands first), ground pepper and cayenne pepper.
  • Stir and use your hands to massage it all over the vegetables.
  • Put it flat on a 9×13 inch oven tray without much overlap and bake for about 25 minutes.
  • After baking the veggies for about 10 minutes, start toasting the bread in a toaster oven, a toaster or anything you use that toasts bread (if you want the bread toasted, that is).
  • Assembling: First, add a few baby spinach leaves, then add the bell pepper, mushrooms, onion and garlic, and close the sandwich and cut in half.

 

 

2) Oyster Mushroom Burger

 Ingredients:

  • Oyster mushroom
  • Chilli sauce
  • vinegar
  • Garlic
  • Flour
  • Cheese
  • Tomato
  • Burger buns
  • Lettuce
  • cumin
  • Pepper
  • Salt

How to prepare this recipe?

  • Clean the oyster mushroom clusters by patting/wiping it with a damp paper towel. Mix all the dry ingredients for the batter in a bowl and add water. Mix until it becomes a batter.
  • Coat the mushroom cluster in the batter.
  • Deep fry over medium heat until golden brown. Let it stand on a cooling rack to drain excess oil.
  • Toast the burger buns and spread a layer of the sauce on the inner part.
  • Add the oyster mushroom then spread a layer of the sauce on top.
  • Add a slice of cheese, lettuce, tomato and top of the burger bun. Serve and enjoy!

3)Spicy Oyster Mushroom Recipe

 Ingredients:

  • Oyster Mushroom
  • Salt
  • Pepper
  • Olive oil
  • Flour
  • Cumin

How to prepare this recipe?

  • Clean, wash and thinly chop the mushrooms. In a bowl, mix the salt, black pepper, cumin, sweet and hot red pepper.
  • Season the mushrooms with the spices and let them absorb for 10 minutes. Heat the oil, roll the mushrooms in flour and fry until done.
  • Serve the spicy mushrooms as a starter or a delicious beer appetizer.

4) GARLIC BUTTER OYSTER MUSHROOM

Ingredients

  • oyster mushroom
  • Olive oil
  • Butter
  • Parsley
  • Pepper
  • Garlic
  • White wine

How to prepare this recipe?

  • Clean the mushrooms by gently wiping off any dirt with a wet paper towel. You do not want to rinse them because they absorb water easily and will become chewy when cooked. Slice as desired.
  • Take a frying pan and add the butter and olive oil to a large skillet over medium heat. Once hot, add in the mushrooms in an even layer.
  • Let the mushrooms sit on medium heat and do not touch them for about 3 minutes. This will create some nice caramelization around the edges of the mushrooms.
  • Stir and cook for 2 more minutes. Pour in the wine, if using, and cook for an additional 2 minutes. Stir in the garlic and parsley and cook for 1 additional minute.
  • Season with salt & pepper, and garnish with additional herbs and enjoy!

5) OYSTER MUSHROOM SATAY

Ingredients

  • 1/4 cup harissa paste

  • 2 tbsp olive oil

  • 1/4 cup soy sauce

  • 1 tsp smoked paprika

  • 1 tbsp rice vinegar

How to prepare this recipe?

  • Preheat your oven to 425F.

  • In a small bowl whisk together the harissa paste, olive oil, soy sauce, paprika and rice vinegar. Taste and feel free to adjust the seasoning to your preference (this also depends on your harissa paste, so feel free to adjust based on your paste’s savoriness and spice level).

  • Tear apart the oyster mushrooms, you want small chunks and strips.

  • Fold over each piece of mushroom onto the skewer, forming about a 6-8 inch stretch of mushrooms on each stick.

  • Generously brush each skewer with the harissa mixture. Place the skewers on a parchment lined baking sheet.

  • Roast the skewers at 425F for 10 minutes, then flip and roast for another 8-10 minutes or until the skewers are dark red and caramelized. This might take more or less time depending on your oven and the moisture content of your mushrooms, so keep an eye on them!

  • Remove the skewers from the oven. Then top the skewers with chopped scallions and toasted sesame seeds and serve warm.

PULLED OYSTER MUSHROOM BBQ SANDWICH

Ingredients

  • BBQ SAUCE
  • ONION
  • OYSTER MUSHROOM
  • OLIVE OIL
  • HAMBURGER BUNS
  • SALT & PEPPER

Toppings

  • ARUGULA
  • TOMATO
  • DILL PICKLE

 

How to prepare this recipe?

  • Make the BBQ sauce, if you don’t already have some on hand, to allow the flavors to infuse while you prepare the mushrooms (see notes below for homemade recipe).

  • Thinly slice the mushrooms. They should look shredded.

  • Heat the oil in a large skillet on medium heat.

  • When the oil is hot, add the mushrooms and onions and stir frequently until the mushrooms lose their water and the onions become translucent and soft, approximately 5 to 7 minutes. Depending on the size of the pan, you may need to cook the mushrooms and onions in two batches.

  • Turn up the heat to medium-high and add salt and pepper to taste. Cook until the onions caramelize and the edges of the mushrooms begin to crisp up, approximately 5 minutes.

  • When the mushrooms and onions are done cooking, add the BBQ sauce to the pan and stir until the mushrooms are completely coated in the sauce.

  • Bring the mixture to a boil on medium heat and then reduce the heat to a low simmer. Cook for 15 minutes, stirring frequently until the sauce is thick and sticky.

  • Serve the mushrooms on the buns and top with the arugula, tomato, and  sliced pickles

PAN-FRIED GREEN HERB OYSTER MUSHROOM

INGREDIENTS

  • Oyster Mushroom

  • Garlic

  • Chili peppers – They give the dish a bit of a kick, but you can omit them if you don’t like things spicy

  • Thyme

  • Parsley

  • Coriander seeds

  • Lemon juice

  • Black pepper

  • Salt

  • Olive oil

How to prepare this recipe?

  • Take a frying pan and heat over medium/high heat.

  • Add olive oil and crushed coriander seeds. Stir and fry the seeds for a minute to activate their flavor.

  • Add shredded oyster mushrooms. Season it with salt and black pepper. Stir occasionally and fry them for approx. 5-6 minutes until they start to get crispy brown on both sides 

  • Remove the cast-iron from the heat and lower the temperature to low/medium before adding the other ingredients. Herbs tend to get burnt if the heat is too high.

  • Add a dash of olive oil and the fresh herbs, garlic, and chili pepper (optional). Stir and fry them for approx. 2-3 minutes.

  • Add lemon juice and stir well. Taste and adjust seasoning. Add salt or black pepper if needed.
